Marinada uklju\u010duje za\u010dine i mirodije. Dobro bi bilo napraviti i kemijsku osmozu, to\u010dnije ostaviti da meso odle\u017ei u otopini vode i soli.<\/p>\n<p>U tu otopinu mo\u017eete dodati i vina, octa, herbalne trave i sli\u010dno. Trajanje i koli\u010dina soli i vode \u0107e ovisiti o mesu pa je to va\u017eno provjeriti. Nakon mariniranja je bitno da meso prije pe\u010denja odstoji na sobnoj temperaturi barem jedan sat.<\/p>\n<h4>Nemojte \u0161okirati meso<\/h4>\n<p>S obzirom na to da meso treba na ro\u0161tilju posti\u0107i temperaturu od barem 60 stupnjeva, lak\u0161e \u0107e do\u0107i do toga ako krenete sa 25. Ukoliko \u0161okirate meso i stavite ga na ro\u0161tilj direktno iz hladnjaka ono \u0107e biti \u017eilavo.<\/p>\n<p>Tako\u0111er je bitno paziti da meso ne bude previ\u0161e tanko ili previ\u0161e debelo narezano. Za dobro pe\u010denje je bitno da je izvor topline kvalitetan, \u0161to zna\u010di da morate imati dobar ugljen ili drvo. Ja osobno koristim drva koja ostavim da do kraja izgore.<\/p>\n<h4>Temperatura treba biti konstantno ista<\/h4>\n<p>Ako koristite ugljen neka to bude onaj koji daje dobru temperaturu bez mirisa.
